GOLDEN MUSHROOM BANANA BREAD

Ingredients:

3 ripe bananas

150g happy honey or vegan alternative of choice (for example: agave syrup)

250g spelt flour

1tsp baking powder

1tsp vanilla sugar / vanilla bean

pinch of salt

1-2 tbsp Golden Mushroom Chai blend

5 tbsp olive oil or vegetable oil of choice

1 cup soy or coconut based yogurt

peanut butter and chopped walnuts to sprinkle on top as an optional topping

 

How to:

Preheat oven to 165°C (top and bottom heat)

Mash bananas with a fork in a bowl.

Add honey and combine well with mashed bananas.

In a second bowl, combine spelt flour, baking powder, vanilla, salt and Golden Mushroom Chai.

Then, pour the banana mixture into the second bowl with flour. Gently mix with a wooden spoon.

Next, add the oil and yogurt. Combine well.

Finally, pour the dough into baking paper lined loaf tin.

Bake for 65 minutes or until a wooden skewer inserted into the centre of the cake comes out clean.

Let cool down completely and top with peanut butter and chopped walnuts.
